Dom Perignon XXXXLABEL
Production

Moet & Chandon's Dom Perignon uses the méthode champenoise for their champagne production. XXXX LABEL is composed of

DESCRIBE grape percentages. DESCRIBE the production process including such items as matured in oak casks, a blend of so many years, aged in oak casks, matured X years before disgorgement, the dosagé and the bottle rests X months after disgorgement.

EXAMPLE
40% Chardonnay, 40% Pinot Noir, and 20% Pinot Meunier. 5% of wines are matured in oak casks with weekly batonnage. 10% of reserve wines are matured in casks. Partial malolactic fermentation occurs. Dom Perignon XXXXLABEL is a blend of 6 years of harvesting, a part of which comes from the Dom Perignon reserve wine collection, aged in oak casks for several years.

Dom Perignon XXXXLABEL is matured for 3 years in the cellar before disgorgement. The dosagé of between 10 and 11 grams/liter is adapted to each bottling. Label rests for 6 months after disgorgement.
